You’d select the impedance (ohms) to match the amp.

When you’re shopping for amps, you’ll find that most mono amps produce their maximum rated power with a 2-ohm load, so if you select the subs to get a 2-ohm load, you’ll have more amplifier choices.

The CV-R is a dual voice coil sub; so the way that you combine the two voice coils will determine the final ohm rating.

If you’re only going to use one sub, then pick a 4-ohm CV-R. You can wire the two coils in parallel and end up with a 2-ohm load.

If you’re using two subs, then you’ll want the 2-ohm version. This lets you wire the coils of each sub in series, then wire the two subs to the amp in parallel, ending up with a 2-ohm load at the amp.

A mono amplifier, rated around 500 to 800 watts RMS at 2 ohms, would be a good match if you’re using two subs. Kicker’s ZX750.1 is one example, but there are many others. For a single sub, look for an amp rated between 200 and 400 watts RMS, like a ZX400.1.
